A traditional Malay cookie, made without eggs, perfect for Hari Raya entertaining.
INGREDIENT
For pastry
350 gr plain flour
200 gr butter or margarine
3 tbsp iced water
1 tsp vanilla essence
0,5 tsp fine salt
For filling, mix together
50 gr toased peanuts, roughly ground
30 gr fine sugar
For topping
1 cup icing sugar
METHOD
1. Sift the flour with the salt. Melt the butter and when cooled, mix into flour, kneading well. Ad water mixed with vanilla essence and knead till you get a firm dough which doesn't break apart.
2. Break off a small mound of dough, make a well in the center and spoon about 0,5 tsp of the filling into the well. Seal by pinching the edges together.
3. Using a pair of pineapple tart pincers, pinch a leaves pattern on either side of the pinched edge and place on waxed or greaseproof paper on a baking try.
4. Preheat oven to 160-180 degree celcius for 10 minutes.
5. Bake the kueh in the oven for 15-18 minutes till cooked.
6. Remove from the oven and allow to cool slightly. When not too hot, roll in iching sugar.
