We are hearing less of Tuan and Nyonya as equivalent of sir and madam nowadays, unless one wants to be cynical to fellow countrymen, or addressing foreigners politely. Once a foreigners has come an acquaintance, he/she maybe addressed like one of their own.
Bapak, Pak (literally Father) is used for older man, teachers, respect man.
Ibu, Bu (literally Mother) is used for older ladies, female teacher, respect women.
